It may appear daunting at first but it enforces the document template which makes sure semantic properties are properly set. It also makes it less likely that important properties (like subjects, authors etc) are omitted. For most documents, only two of the form tabs are needed - ''Basic information'' and ''Free wikitext''. I tend to use Notepad++ to pre-format the free wikitext part (ie the bulk of any document). The sandbox has its uses but you do risk having work overwritten if you spend a long time preparing full articles and documents using it - best to use it just to experiment with such things as tables, maps, special formatting etc. It ''is'' possible to move any article to the Document namespace by simply prefixing its name with <code>Document:</code>.
